Sweet Potato Chips that wow a 2 year old and a 40 year old

I made this last night for dinner. Such a hit--especially with DH & Ryleigh both who do not usually like dishes with sweet potatoes--they each had 3 helpings. And the other girls loved as well. Thought I would share as it is really easy to make

3 sweet potatoes washed and peeled
1/4 cup butter melted
1/2 tsp salt
1/4 tsp pepper
1/8 tsp paprika

preheat oven to 425
spay a cookie sheet/jelly roll pan with non stick spray
cut sweet potatoes into thin slices (about 1/8" thick) and lay
evenly in cookie sheet
mix everything else together and brush over the sweet potatoes with a pastry brush
bakes for 25-30 or until tender

(they will not be crispy like regular chips unless you slice super super thin-don;t have time for that, instead they are tender and full of yummy flavor

Sounds delicious -
I made homemade tomato sauce last night. From the vine to the freezer - my own tomatoes. What a sense of accomplishment! Amazing how many tomatoes it takes to make sauce.

I think we'll have sweet potato chips for supper tonight...

I made those once for a group of restaurant servers and bartenders and took it into restaurant. They LOVED it. Even the managers came around to taste them. I made it up, I hadn't read a recipe anywhere. So the mistake I made was using EVOO (extra virgin olive oil) instead of cooking spray so when I put on the butter it got really greasy. I agree with not slicing them too thin or they will burn around the edges. I sprinkled them with cinnamon and it was a hit. TFS

I wish we'd planted sweet potatoes. I wish we'd planted cabbage. I wish we'd planted something other than 12 pattypan squash plants and two long rows of field peas. :lol:

Those sound sooooo good. I love sweet potato fries so this is right up my alley! Thanks for sharing your recipe! :D

Christy that recipe sounds wonderful. I love sweet potatoes and NC certainly does grow them well. I wonder how I could convert that without using butter ;-)
