recipe for a snowy weekend

Post by pamcook »

I love following the Pioneer Woman's blog. Her sense of humor is the best.
Here's one of her recipes.

Just forwarded it to DH - this sounds good. Would be even better if I bake up a batch of Rosemary Biscotti and make some cole slaw. ;)

Holy COW that looks awesome! So, if any one of you decide to make a large batch of this stuff and have a party, let me know. I'll get my plane ticket reserved! Seriously - it looks THAT good. :D I don't do the grocery shopping for my household, but I will be asking Rob to see if our store carries it. If it's not there, I will start a quest for the stuff at the local specialty stores. MUST TRY THIS BEVERAGE.

I'm ready to run down to the corner Bodega,
even if i'm still in my PJs
but then i would need to go up to the Avenue for
the Kahlua and it is a little nippy out there
45 years married to a PR and no one ever told me
about Dulce de Leche, I wonder if it tastes like
caramel........

It does
and if you can't find it anywhere if you have a can of sweetened condensed milk in your pantry well then here you go

MICROWAVE DULCE DE LECHE
When Sweet Tooth makes this on the stovetop, it seems to take forever. In the microwave, it takes less than 20 minutes. Makes one cup, which serves one Ted with one spoon.

1 14-oz can sweetened condensed milk

Empty the can into a large (2-1/2 quart or larger) glass bowl, and cover with plastic wrap (cling film), keeping a tiny bit uncovered to prevent excess steam build-up.

Microwave on medium power (I used level 5 on a 10-level appliance) for 2 minutes. Remove, stir with a wire whisk, and recover. Cook on medium for 2 more minutes. Remove, stir with a whisk, recover.

Then, in increments of 2-1/2 minutes, cook (on medium power) for another 10 minutes, stirring between each interval. After the first two stirs, you'll notice that the milk bubbles and foams up as it expels moisture. Then, with each stirring, the milk will be thicker and more caramel colored.

If after the 10 minutes, you like the color and consistency, stop! If you'd like a thicker sauce, continue cooking in 1-minute increments for another 2-3 minutes.

Remove from the microwave, and let cool before packing in a glass jar, or use right away as a topping for ice cream.

Oh my goodness. This Dulce de Leche (did I spell it right?) coffee is better than you could ever imagine. It's snowing like crazy and I still had to stop for the ingredients. Yu-u-u-u-um.

Every recipe I've tried from her website and her book is fantastic.
