I found this recipe in Real Simple. It's one I'll make over and over. I'm posting my version since I'm very lazy and my version turned out SO good!
1# of stew beef cubes - salt & pepper them and brown them in a tablespoon of olive oil.
Remove the beef cubes and dump them in your crock pot.
Dump in -
1 chopped onion
4 cloves of garlic, smashed
1 chopped carrots
1# of mushrooms chopped or sliced or whole - doesn't matter
1 can of diced or crushed tomatoes
2 tbsp of tomato paste
2 cups of beef broth (why didn't I try some burgundy wine? because I'm fresh out!)
some rosemary (I cut off a piece of a branch and put it on top - removed it after a couple hours because DH complains about the taste of rosemary)
Let it all cook on low for about 6 hours. Take the lid off for the last 30 minutes or so to let the broth thicken up.
serve over some pasta
I'm having the leftovers for lunch today. It's still delicious!
